DIRECTIONS: • 15-18 Large mushrooms • 1/2 Medium onion, finely chopped • 2 Cups fresh spinach, chopped • 1/3 Cup bacon bits • 1 1/2 Cup seasoned bread crumbs • 1 1/2 Cup Gils Chardonnay Artichoke Salsa • 1/4 Cup Parmesan cheese, graded Clean mushrooms and remove stems. Place mushroom cap on lightly oiled baking dish or pan with hollow side up. Finely chop stems. Saute' stems and onion in skillet with a little butter, briefly. Add spinach and continue to saute' until spinach is tender. Add bacon bits, bread crumbs, and Gils Chardonnay Artichoke Salsa (add more salsa if you like it spicier). Remove from flame and mix thoroughly. Fill mushroom caps with mixture and top with a little Parmesan cheese. Bake at 350 degrees for 15 to 20 minutes or until tops are lightly browned.
