DIRECTIONS: • 10 inch fresh, soft, tortillas • cooking oil • mexican cheese, shredded (jack/cheddar) • diced onions • black or green olives, sliced • tomatoes, diced (fresh or canned- preferably fresh) • Frog Ranch Chipotle Salsa • sour cream Pick a griddle or skillet large enough to hold a flat 10 inch tortilla. Apply just enough cooking oil to lightly coat the griddle or skillet. Place the tortilla on the griddle (or skillet). Add a small portion of cheese, onion, olives, and tomatoes on one-half of the tortilla. Fold the tortilla in half and cook approximately one minute on each side until the cheese has melted and the tortilla is lightly browned. Do the same to the rest of the tortillas. Cut into wedges and serve immediately topped with Frog Ranch Chipotle Salsa and a dollop of sour cream. [Serves 5-10] © 1997-2004, Salsa2U.com |
